Grandma's Annual Easter Egg Hunt 2009

Every year, my parents do an Easter Egg hunt for the grandkids. They have a huge yard with lots of trees, fences, a swingset, flower beds...lots of great places to hide Easter Eggs. We had a great time! Steve and I brought the kids up at about 1 PM and got to spend some time with Grandma and Grandpa. We did the hunt at about 2 and it lasted quite a while. My parents got these cute little fleece bags with Easter themes on them so they could collect their eggs. Each grandchild who was able to participate got a certain color of egg to find. My parents also included a kite for each child as well as a thing of bubbles. The kids really enjoyed themselves! After the hunt, we had our Easter dinner ( I know, Easter is this weekend but this was the only time that worked best for most of us.). We had the traditional ham, deviled eggs, rolls, scalloped potatos, and mandarin orange cottage cheese salad. This year, I made a pea and bacon salad. It was really good. I'll include the recipe.

Pea & Bacon Salad:

1 package frozen peas, thawed

1/2 red onion chopped

3 oz package precooked & crumbled bacon

1/2 C cheese (use your favorite. I like Colby Jack)

1/4 C Sugar

1/4 C mayo

2 TBSP vinegar or lemon juice

*I like to mix the sugar, mayo and vinegar first. The quantities listed for the rest of the ingredients are from the recipe. Add more or less to your taste. I like a lot of onion, bacon, and cheese so I usually add more than what it calls for. The precooked bacon can be found near the salad dressings.

Serve chilled and enjoy!
